The recipes have been gathered from the chef's 20 years of experience and from culinary experiences gathered while traveling. Throughout this time, Janek has managed to try out various combinations of spices and ingredients, and he believes that skillful and innovative use of them in the kitchen reveals new previously hidden flavors, even in very familiar dishes.
At the Loft and Ürdid restaurant, the quality of ingredients is of utmost importance. This is taken very seriously, responsibly, and with great respect.
